Default Is this routine okay? A couple of questions

Hey guys, summer's here and I really want to start working out. I'm 15 years old (turning 16 sometime in the summer) and I'm naturally skinny - I've always been skinny and weighed less than everyone else. I want to start working out but since I've never done it before, (but have read a lot of about it and I know general ideas of what to do) I still have a couple of things I don't know about.

I read somewhere that the amount of weight I should be lifting for each exercise should be 70-75% of my 1-rep-maximum if my goal is to gain mass and some strength. Is this true? If not, how do I know how much weight I have to use? I also read that I should do 6-9 sets of 6-8 reps of that amount of weight. Is that right?

Also, I only have dumbbells at home, so I can only do dumbbell exercises, but I know that there's a lot you can do with dumbbells. I'm not missing out on anything (other than an extreme addition to variety to prevent boredom) by just having dumbbells, right?

As for food, I know I have to eat a lot of protein and a lot of carbs, but ... what are some key foods that I should look out for and be eating frequently? I know turkey, chicken, and eggs are all good for protein. Pasta's good for carbs... But I don't want to be having eggs, turkey, chicken, and pasta for my meals every single day... and how will I know if it's enough? I really want to be able to eat as much as possible but I know I'm going to get sick and tired of it quickly if I force myself to eat chicken and egg and turkey sandwiches every single day...

So what can I do?

I'm not saying I don't want to eat them at all, I'm saying that I'm going to get really bored of the same foods over and over again if I have them every day so I'm asking for more options. I love chicken, turkey and eggs but I definitely want more to my menu than those three things.

But how does the information on the amount of weight I'm using sound?
