Default new here, need advice

hey everyone, right now, my workouts are like this: i do about 10 mins of running for my warm up adding up to about 1.2-1.35 miles,i then start my lifting routine. i target 1-2 muscle groups per day then follow it with a 20-30 minute cardio routine consisting of either the elliptical, stair machine, or treadmill. when i first started i was 144 lbs then for some reason jumped to 150 now back down to 145-146. the only supplements i use are glutamine, that i mix into my protein shake even though my protein has glutamine in it, my protein is the stage 3 eas protein blend. i just added NO Xplode for a pre workout drink which isnt as great as some people hype it up to be but im going to keep taking it till i run out. i like my lean muscular physique, i used to be fat, or obese would be a better word haha. i drink about a gallon of water and i eat 2000-3500 cals a day, i work out 6-7 days a week if i need a day off i just do cardio or just lift instead of doing both then get back into my regular routine. i want to get more muscular but keep my lean physique, how would i accomplish this without getting bulkier? and would taking a 1-2 day break hurt me since ive not been taking any?
