Anyway dude, just have her do what would normally do for cutting or losing fat. Calorie count; cardio---biking, running,
jumping rope would probably be best for her; train and have her do weight bearing exercises and stress heavy weights less reps when doing leg workouts.
As for rope skipping (jumping), I'm a huge advocate for it. Light on the knees, definitely an all body workout in paticular nice focus on the legs when you get good. Secondly you could burn up to similar amount of cals you do in jogging in less time. Plus if you remember your kid songs the time goes by a lot faster.
There are definitely calve exercises. But have her work on the entire leg. Squats of all variations, that toe step thing (where you step up on your toes and down again) but with dumbbells on your shoulder (while you're holding them. Check out the exrx website for more workouts.
All in all have her workout with you. She just needs to workout and diet change and she should be fine.
