Great with chicken or pork: fresh sage.

Also: dried or fresh chives, and marjoram.

Cook the chicken in a skillet sprayed with non-stick cooking spray (or just use a little grapeseed, peanut, or coconut oil if you don't mind the fat)

Sprinkle with a little salt/pepper, and after it's half done, add the herbs. Cover, but not tightly (so steam can escape), and you'll have delicious chicken, juicy inside, but with a nice crusty exterior. If you have an abundance of fresh sage (it's easy to grow, BTW), the cooked leaves are quite good.

being asian i occasionally like to have lemongrass w/ chili smothered on my chicken. Just had some earlier this week.

i like stubbs chile and lime seasoning.

theara.... lemon grass is awesome, where do you get that?

i had some lemon grass chicken at a Vietnamese place last week, and it was delicious.

Grow it!

You might be able to find it in an Oreintal Market but I haven't seen them around. Best bet is to find someone you know who grows them and get a few stalks and freeze them for storage. You could also try to grow some but they grow about 4-5 ft high. The look just like any other decorative grass but they are very fragrant.

for anyone interested: this is what i'm talking about Cymbopogon - Wikipedia, the free encyclopedia

the stalk is used for cooking purposes, usually minced, chopped, diced, or blended.

Also, was this vietnamese restaurant up in Boone? My sister's friend owns a noodle shop up in boone.

There is no recipe forum and most of you guys are talking marinades and rubs. If you want a real treat that is harder to read than do check this out. I made it for supper Thursday and my wife almost ate the pattern of the dinner plate.

Asian Chicken-Salad Pitas

Servings:2 people

INGREDIENTS

4 tablespoons natural peanut butter
2 tablespoons teriyaki sauce (light)
2 chicken breast halves, baked and diced
1/3 cup canned pineapple, drained and chopped ( not used, you may like it in this, not me)
1/4 cup celery, chopped
1/3 cup canned water chestnuts, drained and chopped
1 red bell pepper, diced
1 small red onion, chopped
2 6-inch Whole wheat pita bread

PREPARATION

Mix together the peanut butter and teriyaki sauce in the bottom of a large bowl. Dump in the other salad ingredients and stir everything together. Split the pitas in half, pop 'em open, and fill each half with a quarter of the salad.

NUTRITIONAL INFORMATION


Calories: 595 calories
Carbs: 63 g
Protein: 43 g
Fiber: 11 mg

Give this a try.

Size 18. chicken
1 cup melted butter
1 cup stuffing
1 cup of uncooked popcorn
Salt & pepper to taste

Preheat oven to 220c.

Brush chicken well with melted butter, salt and pepper. Fill cavity with
stuffing and popcorn. Place in baking pan with the neck end towards the
back of the oven. Listen to the popping sounds. When the chicken's arse
blows the oven door open and the chicken flies across the room, it's done.
