The things i could find with regards to "NS" and eggs besides "Nova Scotia" egg farmers was this link. I understand what it means with regards to this article but as far as a cooking method, i think it means "NOT Signifigant". Basically, no matter how you cook it...the nutritional values remains static. NS seems to be a term loosely used with recording variations (or lack there of) in data with egg density and other values but its meaning holds the same for cooking method as well. Hopefully this helped.
