holy crap that sounds great... i'm going to try it out (minus the red pepper) but it sounds tasty. Which brand goat cheese do you go with?

The goat cheese I use it out of the Organic section. Brand doesn't matter. What ever they have that is organic! (montchevre crumble goat cheese is what is in my fridge at the moment)

You should really add the roasted red pepper. It is NOT a spicy pepper, but sweet and the roasted ones are AWESOME! I got my peppers jarred from the organic section. Maybe try it in one of the 1/4 so if you don't like it, you don't ruin the rest of it.

Here is a great idea for a chicken stew I made up. Very healthy and tasty!

1 can (15oz) Organic tomatoe sauce
2 cans (30oz) Organic stewed tomatoes
2 cans (30oz) Organic chili beans
1 cup Organic frozen corn
1 Whole onion
2 pounds chicken breast
1 jar of thick and chunky salsa... temperature to liking.

In a pot, combine tomatoe sauce, stewed tomatoes, chili beans, jar of salsa, corn and diced onion. Temperature to medium.

Dice chicken into cubed, bite size pieces and cook in a skillet. Season with salt and pepper.

Add to pot and mix well. I generally cook it on medium for 10 minutes stirring every few minutes. lower temp to and cook for an hour or so, stirring every 5 minutes or so.

Should make 10 sevings.
Serving size = 1 cup

calories - 266
carbs - 24g
fat - 3.5g
protein - 34g

add cayenne for heat or chili powder to make a chili.
substitute turkey or steak in place of chicken.

I break it up into 5 plastic containers and freeze 4/5. Take one container out the freezer the night before and heat it in the morning into a thermos for lunch.

Balsamic vinegar. works a treat. after every workout, i eat a tin of tuna (splash some balsamic vinegar in) straight from the tin and a banana.

sometimes i alternate, a protein shake and a banana instead.
