I was wondering the same thing. Except I was wondering of the smoked oysters in cottonseed oil.
What seems odd to me is the sardines have a much lower sodium than the oysters. The Oysters have 340mg. fat 9g, cholest. 55mg, carbs 10, Protein 12g.

An alternative I used to mayo when making tuna or chicken salad was no fat soy mayo. The brand I used was Nasoya. It had a funky texture if you just put it on, say, a turkey sandwich, but mixed in with tuna or shredded chicken, you could NOT taste the difference and there was no texture issue. It contains very few calories, no sacrifice on the taste when used in a salad type mixture and zero fat. And by the way, I do not like soy products and very few fat-free products are appealing to me - but this was one option for me that was great all the way around.
