hydrostatic testing will give you an error rate of about 2.7% skinfold test gives you an error rate of 3.5%

Just about everything is not accurate.
At minimum there is a (I think) 2% swing either way unless you are using $10K plus machines. Then again, my old boss used to say it correctly: "The only way to TRULY know your body fat is to die, and then get cut up into little pieces. Until then, it's just a guess at best" But then again people do love their numbers to quantify everything.
