IMO you'll be fine. Lets take biceps for example. Say you work them on Mondays. They will also be getting worked on back days and even get a little bit of stimulation on other upper body days. I believe that this would be enough to prevent or at least minimize atrophy.
And for working out each muscle once a week there is no "way to do it." Different things work for different people.
